Here are some great recipes that use various whole grains for you to try at home!
10 Grain Yogurt Quick Bread - Bob's Red Mill
Makes 1 Loaf (12 slices)
Ingredients
Preheat oven to 350F. Lightly grease a 9 x 5-inch loaf pan, set aside.
In a large bowl combine flour, salt, baking soda and brown sugar.
In another bowl beat eggs and add oil; fold in yogurt thoroughly. Pour liquid ingredients into dry ingredients; stir until ingredients are moistened. Do not over mix. Turn batter into prepared loaf pan and bake for 55 minutes or until toothpick inserted in center comes out clean.
*To liven up the flavor, try adding a fruit yogurt instead of plain.
Oatmeal Blueberry Applesauce Muffins - Adapted from Joy the Baker Makes 12-15 muffins Ingredients: - 1 1/4 cups whole wheat flour
- 1 1/4 cups oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1 cup unsweetened applesauce
- 1/2 cup low-fat buttermilk
- 1/2 cup firmly packed brown sugar
- 2 tbsp canola oil
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 1 large egg, lightly beaten
- 3/4 cup blueberries (fresh or frozen)
Preheat oven to 375 degrees. Line a 12 cup muffin tin with paper cases or spray with nonstick cooking spray. In a large bowl combine flour, oats, baking powder, baking soda, salt, lemon zest and cinnamon. In a medium bowl combine applesauce, buttermilk, sugar, oil, vanilla and egg. Make a well in dry ingredients and add applesauce mixture. Stir until just moist. Fold in blueberries. Fill muffin cups 2/3 full. Bake for 16-18 minutes. Overnight Steel Cut Oats (Adapted from Food Network) Makes 4 servings
Ingredients - 1 cups steel-cut oats
- 4 cups water
- 1/2 cup whole milk
- 1 1/2 cups raisins (or dried blueberries, cherries, cranberries, apricots or a combo)
- Brown sugar or pure maple syrup, for serving
Directions In a slow cooker, combine all ingredients and set to low heat. Cover and let cook for 8 to 9 hours. Stir and remove to serving bowls. This method works best if started before you go to bed. This way your oatmeal will be finished by morning. Make Ahead The prepared oatmeal can be refrigerated for up to 1 week. Rewarm in a microwave oven and thin with water if necessary before serving. |
